How do I use up milk?

One of the great mysteries of the universe - why when I buy two litres of milk we never finish the bottle and when I buy 1 litre of milk we always run out?

I have gone to always buying the 2 litres now and the off milk I give to our dog as a treat. But I always look at it and think how I could use the milk in our food before it goes off.

Can you freeze milk and use it later?
Any recipes that use up a lot of milk that can be frozen?

you can freeze milk...but i think it needs to be done well before it expires. you could make custard, vanilla bean custard yum!

Gosh we go through 3 litres a day! I always have a few litres in the freezer for when i can't get to the shops (those lazy days)
The main recipe that always takes alot of milk for us is bechamel sauce we use for lasagna.
I agree with Sarah that you should freeze it well before its used by date and im not sure on how long you can keep it in the freezer. Just a couple of months i guess as i have pulled some out of the back of the freezer and it curdled as it defrosted. You could also try powdered milk to make up as you need it or long life milk

I used to freeze milk, and still do if it's an emergency, like we are going away. But now I make cream cheese and/or yoghurt with the leftovers! Will do a blog post in the next week about both of these things, they are super easy and a great way to get rid of the excess :)
