Last day of the Holidays....First day at work

Spent our last day of holidays at the races watching a friend's horse come last - not too good.
The highlight of the day was cooking my first lamb shoulder. I have only ever cooked the legs of lamb and now I have found out that the shoulder far exceeds meat on the leg.
Get your butcher to bone the lamb shoulder. Lay flat in a baking dish with 1 cup of water in the bottom. Wrap in 2 layers of al-foil. For a 1.5kg to a 2kg piece cook it for 4 hours total. You can take the al-foil off for the last hour to crisp it up. The meat just falls apart - it really is beautiful.
And today I made flour tortillas and we had kebabs with the leftover meat. I made up a tzatiki type sauce and salad. Yummo!
Made the first day back at work not so hard to handle.
Now that I am back at work I am full of inspiration and excitement about what 2010 holds. We have our 3 monthly goal meeting tomorrow and I can't wait to get cracking on all of our ideas. It's a great feeling to want to be at work and to be excited about the future.
Pity I am so tired by the end of the day..... Must keep going!
